Red Pepper And Garlic Hummus |

Better than store bought, cheaper too. Ingredients:
3 cups cooked chick peas |
2 roasted red peppers |
3 cloves roasted garlic, smashed |
2 cloves garlic chopped |
1 tsp. salt or 1 1/2 tsp kosher salt. |
1/2 cup tahini |
1 lemons worth of juice |
2 tablespoons water |
4 tablespoons extra virgin olive oil |
1/4 tsp ground cumin |
1/8 tsp black pepper |
1 tablespoon parsley |
1/4 tsp sweet paprika |
1/3 tsp crushed red pepper. |
Directions:
1. Put all ingredients in the food processor and process for about 60 seconds or until it's at the desired consistency. 2. If you want to mix it up a bit, substitute 1 of the 4 tablespoons of olive oil with toasted sesame oil. 3. Tahini is like peanut butter but made with seasame seeds. I have found it in grocery stores in the same isle as peanut butter but not in the same area. I also found it at our co-op. |
