1 tablespoon oil |
3 cloves garlic, minced |
1 onion, diced |
1 teaspoon paprika |
1 teaspoon coriander |
1 cup red lentil |
1 (14 ounce) can diced tomatoes |
2 cups spinach |
1 teaspoon ginger, root |
4 tablespoons fresh cilantro |
Directions:
1. heat oil, add garlic, then onion. 2. add spices (30 sec). 3. add lentils and 2 c water. 4. cook until lentils are soft (10 min). 5. add tomatoes, salt, spinach (10 min). 6. cook until thickened. 7. garnish with ginger and cilantro. |
