Ingredients:
1 1/4 cups red lentils |
1/2 cup rice |
1/3 cup canola oil |
1 large onion, chopped |
6 cups vegetable stock |
1 tablespoon ground cumin |
1 tablespoon olive oil |
salt & freshly ground black pepper |
Directions:
1. Rinse lentils and rice and pick out any grit. 2. In a large saucepan, heat oil; cook onion about 1 minute. 3. Add vegetable stock and bring to a boil. 4. Add lentils and rice; simmer 20 minutes. 5. Add cumin, olive oil, salt and pepper to taste. |
