Red lentil and vegetable dahl Ingredients:
1 onion |
2 tablespoons oil |
1 1/2 teaspoons turmeric |
1 1/2 teaspoons cumin |
1 tablespoon garam masala |
1 chili |
2 tomatoes |
200 g lentils |
500 ml vegetable stock |
250 g mixed vegetables |
100 g peas |
4 naan bread, breads |
2 eggs |
Directions:
1. Fry the onion in the oil until soft but not coloured. Add the ground spices and 2tbsp cold water. Cook over a low heat for a minute. 2. Add the chilli and tomatoes and cook for 3-4 minutes, stirring, until the tomatoes have softened. 3. Add the lentils and 450ml stock and heat until simmering. Cover. Simmer for 20 minutes, stirring often. 4. Stir in the frozen veg and the rest of the stock. Return to a simmer and cook for 5 minutes. Serve with the naan breads and quartered hard-boiled eggs. |
