1 (15 ounce) can red kidney beans, drained |
3 tablespoons olive oil |
1 medium onion, chopped |
1/2 teaspoon ground cinnamon |
1 teaspoon ground cardamom |
1/2 inch gingerroot, peeled & chopped |
4 garlic cloves, chopped |
1 teaspoon ground red pepper |
1 teaspoon ground coriander |
1 teaspoon garam masala |
1/2 teaspoon ground turmeric |
1 (15 ounce) can diced tomatoes |
2 green chilies, chopped |
1 tablespoon fresh cilantro, chopped |
3/4 cup water |
Directions:
1. Saute onion in oil for 2-3 minutes Add cinnamon & next 3 ingredients & cook for 1 minute Add ground red pepper & next 7 ingredients. Stir & add beans. Boil, reduce heat, & simmer for 20 minutes. |
