Variation off of a recipe found in the South Beach Diet entertaining cookbook. Ingredients:
4 roasted red peppers (from a jar) |
8 ounces cottage cheese |
cajun seasoning |
Directions:
1. Mix all ingredients in food processor or magic bullet. 2. Enjoy immediately! 3. For milder flavor: rinse peppers before mixing. 4. For hotter flavor: add Cajun seasoning. |
