1 cup chopped green pepper |
1 cup chopped onion |
1/2 cup chopped green onion |
3 cloves garlic, minced |
1/3 cup vegetable oil |
1 (10 3/4-ounce) can tomato puree |
1 cup sliced fresh mushrooms |
1 bay leaf |
1 cup sherry |
1 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Sauté green pepper, onion, and garlic in oil in a medium saucepan until tender. Add tomato puree, mushrooms, and bay leaf; simmer 25 minutes. Stir in sherry, salt, and pepper; continue cooking 5 minutes. Remove bay leaf. |
