Ingredients:
1/2 cup light coconut milk
1 tablespoon natural-style peanut butter (such as smucker's)
1 1/2 teaspoons sugar
1 1/2 teaspoons fresh lemon juice
1 1/2 teaspoons fish sauce
1/4 teaspoon red curry paste
Directions:
1. Combine all ingredients in a small saucepan over medium heat, whisking to combine. Bring to a boil; reduce heat, and simmer 1 to 2 minutes or until slightly thick. Cool to room temperature.
