I love cooking Thai food and I'm always looking for things to make with my leftover jasmine rice. I also love fried rice, so I came up with this. Quick, easy and delicious! Ingredients:
1 tablespoon red curry paste |
1/4 cup fish sauce (to taste) |
2 fresh lime leaves, thinly sliced |
1/2 medium onion |
8 ounces sliced fresh mushrooms |
3 cups cooked jasmine rice |
4 eggs |
scallions and fresh cilantro (to garnish) |
Directions:
1. Cook curry paste and lime leaves in a bit of vegetable oil until fragrant. 2. Cook onions and mushrooms in vegetable oil in a wok until tender. 3. Add rice, fish sauce, and curry paste mixture. 4. Separately scramble eggs with dash of fish sauce and some water then add to rice mixture. 5. Garnish with scallions and fresh cilantro as desired. |
