Red Coleslaw With Grapes (Food Network Kitchens) |

Ingredients:
2 tablespoons apple cider vinegar |
1 tablespoon dijon mustard |
2 teaspoons sugar |
kosher salt and freshly ground pepper |
1/4 cup extra-virgin olive oil |
1 small or 1/2 large head red cabbage, finely shredded |
1/3 cup chopped fresh parsley |
6 scallions, chopped |
2 cups seedless red grapes, chopped |
Directions:
1. Make the dressing: Whisk the vinegar, mustard, sugar, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Gradually whisk in the olive oil until well blended. 2.
