My version of red chili - easy, inexpensive and tasty. My husband likes it served over Frito corn chips. Ingredients:
1 1/2 pounds lean ground beef |
1 onion – chopped or diced |
3 garlic cloves - chopped |
1 15.5 ounce can chili beans |
1 15.5 ounce can red kidney beans or black beans or pinto beans |
2 15.5 ounce can diced tomatoes |
1 15.5 ounce can tomato sauce |
1 tablespoon chili powder |
1 teaspoon red chili flakes |
1/2 teaspoon cayenne pepper |
1 teaspoon salt |
Directions:
1. In large pot, medium high heat, with a little olive oil sauté onion and garlic until onion is soft. Stir in chili powder, chili flakes and cayenne pepper. Add ground beef and continue cooking until the beef is brown. Be sure you stir frequently. 2. After the meat is brown, add in chili beans, other beans, diced tomatoes, tomato sauce. Simmer for 1 hour. 3. If the mixture is too thick – add diced tomatoes. |
