hominy stew Ingredients:
16 ounces hominy |
1 pound pork |
10 cups water |
1 tbsp oregano |
1 large onion |
3 cloves garlic |
1 tsp salt |
2 cups peppers |
Directions:
1. boil some red chile pods (seeded and rinsed)in 6 cups water for 30 minutes. 2. add cubed pork stew meat, posole and 4 cups water. simmer covered 30 minutes. 3. add diced onion, minced garlic, oregano, salt and 3 bay leaves, and 1 cup bueno red chile sauce (from frozen) simmer 1-2 hours more, add hot red chile to taste. great with hot buttered tortilla, and a fried egg on top! garnish with diced onion, cilantro, avocado - yum!
