Red Cabbage Salad in a Crunch |

This is a perfect warm-weather salad - really fast and easy so you can get out of the kitchen and outside! Try as a quick weeknight side with your favorite grilled meat. I came up with this one night when I needed something to go along with some fresh tilapia fillets. Threw some stuff together that was in the fridge and voila! Red cabbage, in particular, is a great source of phytonutrients and antioxidant polyphenols (protect brain cells). All cabbage tends to be fairly inexpensive and has many health benefits. Ingredients:
1 head red cabbage |
1/4 cup balsamic vinegar |
1/4 cup pesto sauce, prepared |
salt and pepper, to taste |
Directions:
1. Chop cabbage in fine strips. 2. Mix vinegar, pesto, salt and pepper together as your dressing. 3. Toss well and chill until meal time! |
