Light, fresh, modestly sweet, and slightly nutty. If served as individual servings, consider this alternate presentation: Combine dressing with shredded cabbage and pistachios. Top with mango wedges. Ingredients:
1/2 large head red cabbage, shredded |
1 mango - peeled, seeded, and cut into wedges |
1/4 cup roasted, shelled pistachios |
1 tablespoon chopped fresh mint, or to taste (optional) |
2 tablespoons truffle oil |
1 tablespoon agave nectar |
1 tablespoon lime juice |
1 tablespoon champagne vinegar |
1/2 teaspoon salt |
1 sprig fresh mint |
Directions:
1. Stir red cabbage, mango, pistachios, and 1 tablespoon mint together in a large salad bowl. 2. Whisk truffle oil, agave nectar, lime juice, champagne vinegar, and salt in a small bowl and pour dressing over salad; toss to combine. Garnish with 1 sprig fresh mint. |
