1 teaspoon vegetable oil
5 cups thinly sliced red cabbage
2 1/2 cups diced peeled granny smith apple (about 3/4 pound)
1 cup diced onion
3/4 cup apple juice
1/2 cup maple syrup
1/4 cup balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
Directions:
1. Heat the oil in a large skillet over medium-high heat. Add the cabbage, apple, and onion; sauté 3 minutes. Stir in apple juice and remaining ingredients. Cover, reduce heat to medium, and cook 35 minutes, stirring occasionally.
