Red Cabbage and Apples in Caraway Cream Sauce |

Found this in THE 5 IN 10 COOKBOOK by Paula J. Hamilton. Ingredients:
1/2 small head red cabbage (about 1-lb) |
2 tart apples |
2 tablespoons vegetable oil |
1 cup heavy cream |
1 teaspoon caraway seed |
salt, to taste |
black pepper, freshly ground, to taste |
Directions:
1. Place the cabbage, cut side down, on a cutting board. 2. With a large stainless steel knife, slice it into very thin shreds. 3. Quarter the apples. 4. Remove the cores and cut the apples into 1/2-inch dice. 5. Heat the oil in a large frying pan. 6. Add the cabbage and apples and cook over high heat, stirring frequently, until the cabbage wilts, about 6 minutes. 7. Stir in the cream and caraway seeds. 8. Cook for 3 to 4 minutes longer, until the cream begins to thicken. 9. Season with salt and pepper to taste. 10. Serve hot. |
