Great Flavor! A wonderful side for grilled chicken or shrimp.
Ingredients:
1/4 (large) red bell pepper
1 cup baby spinach
1/2 tsp extra virgin olive oil
1 lemon wedge
1/4 tsp ground coriander
1 pinch black pepper
3 basil leaves
5 sprigs cilantro
Directions:
1. Place spinach in bowl.
2. Slice the bell pepper and place on top of spinach.
3. Sprinkle black pepper and ground coriander on top.
4. Finely chop basil and cilantro leaves and sprinkle on top.
5. Drizzle the juice from the lemon wedge and the olive oil over entire salad. Enjoy!
