Red Bell Pepper Pesto Spread |

Use this mixed with mayo to spread on wraps esp tomato basil wraps and fill with cheese, meats of choice or use as a dip without the mayo Ingredients:
1 large red bell pepper roasted or grilled |
2 tbs prepared or bottled basil pesto sauce |
1/4 cup olive oil |
minced garlic to taste |
splash of balsamic vinegar to taste |
1/4 cup parmesan cheese |
variation |
1/2 cup good quality mayonniase |
salt and pepper to taste |
Directions:
1. Roast or grill red bell pepper, remove skin. 2. Place everything in a processor or blender ( except mayo ) and blend smooth 3. For the spread: use 1/4 cup red bell pepper pesto mixed into 1/2 cup good quality mayonaisse |
