Red Beans and Rice . . . New Orleans Style

Delicious Cajun food
Ingredients:
8 cups red kidney beans
2 medium onions (chopped)
1 cup celery (finely chopped)
6 green onions (chopped)
1 pound sausage (sliced)
3 garlic cloves (minced)
Directions:
1. Wash and soak beans overnight (if using dry)
2. Cook beans
3. Open 4 cans of red kidney beans
4. Add sausage, onins, celery, garlic, and seasoning
5. Bring to boil
6. Reduce heat and simmer
7. For a thicker gravy, remove one cup of beans and mash thru strainer
8. Serve over hot rice
