A family staple....big debate is always sausage or no sausage... I grew up with sausage... so y'all can take it out, BUT it totally changes the flavor in my opinion ; ) Ingredients:
• 2 tb oil |
• 1 cup onion |
• 1/2 bell pepper |
• 1/2 cup celery |
• 1 tsp salt/pepper |
• 1/2 tsp cayenne |
• tsp thyme |
• 2 bay leaves |
• 1 lb ham, boiled |
• 1/2 lb smoked sausage |
• 1 lb dried beans |
• 3 tb garlic |
• 8-10 cups of water |
Directions:
1. 1. Soak beans overnight. 2. 2. Heat oil in large saucepan over medium-high heat. Sauté onions, pepper, celery, salt, cayenne, pepper and thyme about 5 minutes. 3. 3. Add bay leaves, ham, and sausage; sauté 5 more minutes. 4. 4. Add beans, garlic and enough water to cover beans. Bring to a boil, reduce to medium and simmer uncovered, stirring occasionally 1 to 1 1/2 hours. Add water if need be. 5. 5. Mash 1/2 mix against side of pot. Cook another 1 1/2 hours (adding water). 6. 6. Remove bay leaves before serving. 7. 7. Serve with rice. |
