Red Beans and Rice
Ingredients:
1 egg
1 cup milk
1 cup kidney beans, dried
1-4 cups water
1/2 cup chopped onion
1/2 cup chopped parsley
1 clove minced garlic
2 cups cooked rice
1/4 cup grated cheese, any kind
Directions:
1. In a saucepan, cover dried beans with water
2. Bring water to a boil
3. Cook over medium heat until beans are soft
4. Drain
5. Beat egg well and add milk
6. Combine all remaining ingredients and mix well
7. Turn into greased baking dish
8. Bake at 350F for 30 minutes
