Ingredients:
1 cup chunky prepared salsa, such as chipotle salsa |
2 tablespoons extra-virgin olive oil, eyeball it |
1 head escarole, chopped into small bite size pieces |
1 (14-ounce) can red kidney beans, drained |
1/2 red onion, chopped |
salt and pepper |
Directions:
1. Combine salad ingredients in a bowl, toss and adjust seasoning. |
