Ingredients:
1 1/2 pounds dried pinto beans |
1/4 pound salt pork |
1 medium onion, finely chopped |
1 clove garlic, minced |
1 1/2 teaspoons salt |
3/4 teaspoon chili powder |
Directions:
1. Sort and wash beans; place in a large Dutch oven. Add salt pork, onion, and garlic. Add water to cover 3 inches above beans; stir well. 2. Bring to a boil. Reduce heat; cover and simmer 3 hours, stirring occasionally. Uncover and continue cooking an additional 30 minutes. Stir in salt and chili powder. |
