A washday tradition. Ingredients:
1 lb dried red kidney beans |
2 small ham hocks |
2 tablespoons olive oil |
3 tablespoons garlic, chopped |
1 cup yellow onion, chopped |
1 cup vidalia onion, chopped |
1 cup red onion, chopped |
1 cup celery, chopped |
1/2 cup parsley, chopped |
1 bay leaf |
1/2 teaspoon thyme |
1 teaspoon sugar |
1 (14 1/2 ounce) can tomatoes, chopped |
1 lb smoked sausage |
1/2 lb ham |
1/4 lb andouille sausage |
1 quart chicken stock |
salt and pepper |
Directions:
1. Soak beans overnight; drain. 2. Chop meat; brown in oil. 3. Add vegetables and garlic to meat; brown. 4. Add spices; brown. 5. Add beans and tomatoes and stock. 6. Simmer till thick and beans are soft, 2-4 hours. 7. Serve with rice. |
