Red and White Bean Salad

I like to serve this salad when we're grilling our dinner. Also is my lunch when trying to take off those few extra pounds. Easy to prepare and so pretty.
Ingredients:
3 plum tomatoes
1 medium cucumber
16 ounces great northern beans, rinsed and drained
16 ounces red kidney beans, rinsed and drained
2 tablespoons parsley
2 tablespoons vinegar
1 tablespoon olive oil (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Discard seeds from tomatoes;dice.
2. Peel cucumber,leaving some peel on.
3. Discard seeds and dice.
4. In large bowl combine all ingredients and mix.
