Red Ale and Sour Cherry Sauce

Ingredients:
2 1/2 teaspoons shallots, chopped
1 teaspoon canola oil
2 tablespoons dried cherrys, chopped
1/3 cup chicken broth
1 cup chicken broth
8 oz ale
1 teaspoons of malt vinegar
1 pinch salt
1 pinch ground black pepper
1 tablespoon of butter
Directions:
1. DIRECTIONS:
2. Sauté Shallots in clean hot pan w/ Canola oil till shallots are lightly browned
3. Add chopped rehydrated Bing Cherries with the stock & bring to a simmer
4. Add the Double Stock, Malt Vinegar and Red trolley Ale stock reduction
5. Reduce by 2/3 this should yield a little more than 6 oz or a little more then 2 Tablespoons per portion.
6. Season and Finish w/ Butter
