I just found this in my email.from . it looks great. I wanted to save here safely until i get a chance to try it out.
Ingredients:
6 jalapenos
1 bunch basil (chopped)
1 bunch cilantro (chopped)
2 tablespoons cracked peppercorns
1/2 cup vodka
18 ounces tuna steaks
10 ounces kosher salt
12 ounces sugar
2 tablespoons peppercorns (cracked)
Directions:
1. Puree Marinade ingredients(first 5) in food processor until a paste is achieved.
2. Marinate Tuna Steaks for 24 hours.
3. Remove Tuna from Marinade and place in Cure for 24 hours. (the salt, sugar, and pepper).
4. Remove Tuna from Cure after 24 hours and brush off Salt etc.
5. Wrap individually with plastic wrap.
6. Will keep for 1 week refrigerated.
7. Serving Ideas:.
8. GARNISHES: Carrots & Daikon very finely shredded, long & thin - Pickled Ginger - Hard Cooked Egg, Quartered - Tomato Concasse - Sliced Red Onions - Capers - Black Bread.
