This is a delicious DESSERT! It comes from a friend in Canada who can make squash a zillion ways. This dessert you serve warm with some fresh fruit if you wish and topped with either whip cream or cool whip. It is like a bread pudding but with the disquise of yellow squash. Don't tell the kids and they'll never know its in there. Enjoy! Ingredients:
4 crookneck yellow squash |
1/2 cup butter |
1 cup sugar |
2 tablespoons vanilla |
1/4 teaspoon salt |
3/4 cup flour |
4 extra large eggs |
12 ounces evaporated milk |
Directions:
1. Cut up squash and cook in 1/2 cup of water for 10-15 minutes until soft. 2. Drain squash and set aside. 3. In a large bowl mix together butter, sugar, vanilla, salt, flour, eggs and milk. 4. Add squash and mix well. 5. Pour mixture into a buttered 9x13 casserole dish. 6. Bake in 375 oven for 25 minutes or until slightly golden brown and a knife inserted in center comes out clean. 7. Serve slightly warm with whipped cream and any fruits you wish. |
