I make this in place of the usual garlic bread for entertaining with an Italian meal. Ingredients:
1 loaf italian or french bread, cut in half lengthwise |
1 clove garlic, minced (or an equivilent amount of garlic powder) |
1/3 cup olive oil |
1/4 teaspoon salt |
1/4 teaspoon ground black pepper |
1/2 cup green onion, thinly sliced |
1 tomato, seeded and finely diced |
1 1/2 cups mozzarella cheese, shredded |
Directions:
1. Place bread, cut side up, on foil lined baking sheet. 2. Combine garlic, oil, salt and pepper. 3. (If using fresh garlic, heat oil and garlic in small saucepan until warmed and fragrant to blend flavors.) 4. Drizzle oil mixture over bread. 5. Sprinkle with green onions and tomato. 6. Top with cheese. 7. Bake in upper half of oven for 5 to 7 minutes or until cheese is melted and slightly browned. 8. Cut in 1 inch slices to serve. |
