Really Healthy But Good Black Bean Salad |

Bright easy salad spiked with fresh garden vegetables. Served cold or room temp, not a fussy side salad or add cheese and make it a main dish. Ingredients:
1 package dried black beans |
2 cups dried black beans |
1 yellow pepper |
1 red pepper |
2 cups corn kernels |
dressing |
1/4 cup lime juice |
1/2 cup olive oil |
3 minced cloves of garlic |
1 tsp cumin ground |
1 tbsp good chili powder |
salt |
pepper |
1/4 cup minced cilantro |
Directions:
1. Soak black beans overnight 2. Simmer black beans for 2 1/2 hrs in salted water until semi soft 3. Drain beans 4. Make dressing by whisking all dressing ingredients together 5. Salt and pepper to taste 6. Add cilantro and toss |
