I've been making this a long time. I've tried others, but I keep coming back to this one for the texture, flavor and creaminess. Delicious warm! Ingredients:
6 cups whole milk |
3/4 cup carolina rice |
1 cup heavy cream |
3/4 cup sugar |
3 egg yolks, beaten |
2 teaspoons vanilla |
1/4 teaspoon salt |
1 teaspoon cinnamon |
Directions:
1. Rinse a medium saucepan with cold water (don't dry). 2. Pour in milk & bring to a boil over medium heat. 3. Stir in rice & return to a boil. Reduce heat, and simmer, uncovered. 4. until rice is tender (about 55 minutes) stirring occasionally. 5. Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla. 6. and salt. Set aside. 7. When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot. Heat to a slow boil. Remove from heat. 8. and pour into a 2 quart dish. sprinkle with cinnamon and enjoy! |
