Really Good Mediterranean Style Pasta |

The title of this recipe comes from my son who, on first bite, said This is REALLY GOOD . The whole family will enjoy this flavorful Mediterranean inspired pasta dish. Ingredients:
dressing |
1/2 cup extra virgin olive oil |
1/4 cup vinegar |
juice from 2 lemons |
1/4 cup freshly chopped rosemary |
1/4 cup freshly chopped greek oregano |
2-3 cloves garlic, minced |
1 tbsp. sugar |
dash or 2 each of cayenne pepper and paprika |
salt and pepper to taste |
salad |
1 lb. box tri-color rotini noodles |
1 14 ounce can of artichokes, drained and chopped |
1/2 cup sliced kalamata olives |
1/2 cup diced red onion |
1 red bell pepper, largely diced |
4 ounces crumbled feta cheese |
Directions:
1. Place ingredients for dressing in a food processor or blender, emulsify, then set aside. 2. Meanwhile, cook pasta al dente according to package directions. 3. When pasta is done cooking, drain and rinse under cold water and place in large serving bowl. 4. Pour dressing over pasta. 5. Toss in artichokes, olives, onion, bell pepper and feta cheese. 6. Mix lightly until all ingredients are coated with dressing. 7. For best results, refrigerate for 4 hours to allow flavors to meld. 8. Enjoy! |
