The best ever roast potatoes. The key is preparing potatoes and the oil, must be duck Ingredients:
1kg floury potatoes |
duck oil, enough to to give about 5mm depth in roasting pan |
Directions:
1. Peel, cut to desired size and boil potatoes for about 10 minutes until outer portion is beginning to soften. 2. Whilst potatoes are warm place lid on pot and shake well to form a loose crust on outer surface (this will give a crispy texture to outside when cooked). 3. Preheat duck oil to 220 degrees C. 4. Place potatoes in oil turning to coat all over with oil 5. Place in oven for 30 - 45 minutes, basting accasionally and turning once (Cooking time will depend on your oven and you can judge that). 6.
