This is no ordinary onion dip...no dry mixes here! This came out so wonderful for me, I had to share it with everyone! Ingredients:
2 tablespoons vegetable oil |
2 medium-large onions, 3 cups, chopped |
3/4 cup mayonnaise |
3/4 cup sour cream |
salt and pepper to taste |
chives, finely chopped |
4 ounces roquefort cheese, optional |
dippers: baguette slices, potato chips, preztzels, crudités |
Directions:
1. Heat the oil in a large skillet over medium-low heat. 2. Add the onions, cover and cook until golden, stirring occasionally, about 20 minutes. 3. Uncover and continue to cook, stirring often for 15 minutes more. 4. Cool completely. 5. Mix mayonnaise and sour cream in a bowl. If using, add mashed Roquefort cheese to this mix and mix well. 6. Add cooled onions. 7. Season with salt and pepper. 8. Cover and refrigerate from 2 hours to 2 days. 9. If refrigerating for longer than 8 hours, you may need to add milk to thin it a bit. 10. Sprinkle with chopped chives and serve with dippers. |
