Real Mexican Cheese Dip

I got this recipe off the internet after searching and searching, I kept coming up with only the cheese dip that contains rotel, velveeta and sausage or hamburger meat. I was looking for the real mexican cheese dip like they serve in resturants here in Oklahoma. I think I finally found it!
Ingredients:
1 1/2 cups chopped onions
1 tablespoon shortening
2 cups fresh tomatoes
1 (4 ounce) can green chili peppers (chopped)
1 teaspoon salt
1 lb grated american cheese
jalapeno pepper (if you like it hot)
Directions:
1. Saute chopped onion in shortening.
2. Add fresh tomatoes and chopped green chili peppers.
3. Add 1 tsp salt and 1/2 tsp pepper.
4. Simmer until well blended.
5. Add 1 lb grated American cheese.
6. Heat only until cheese melts.
7. Serve with tortilla chips.
8. Can add hot jalapeno peppers in addition to chili peppers if you like it HOT.
9. Makes 1 quart.
10. Freezes well.
