Real Deal Enchiladas

This was my mom's signature dish...I LOVE this recipe! While all my class mates requested pizza at their birthday parties, I wanted enchiladas. Hope you enjoy! NOTE: I prefer flour torillas but corn ones work just as well.
Ingredients:
1 lb ground beef
8 taco size flour tortillas
2 cups red enchilada sauce
1/2 refried beans
2 cups cheddar cheese
1/2 cup onion
1/4 cup vegetable oil
1/2 cup black olives
Directions:
1. Fry beef until cooked through.
2. Pour 1/4 cup enchilada sauce into beef along with 1/2 cup refried beans and mix thoroughly.
3. Heat oil over medim heat.
4. Heat 1 cup enchilada sauce in seperate skillet.
5. With tongs, quickly dip tortilla in heated oil then immediatley dip it in enchilada sauce covering entire tortilla.
6. Lay tortilla flat on plate ***Caution as tortilla will be very HOT.
7. Spoon desired amount of beef mixture onto tortilla (according to your preference).
8. Top with cheese (amount also according to your preference).
9. Rold Tortilla and lau seem side down in casserole dish.
10. Repeat these steps with each tortilla.
11. Bake at 350 degree for 20 minutes.
12. Remove from over and cover with remaining enchilada sauce, cheese and black olives (if desired).
13. Return to oven for 10 minutes or until cheese has melted and is lightly brown.
14. Top with favorite condiments.
