Got the basic recipe from a cookbook for an Advantium Oven. Tweaked as usual. Added some stuff I like. Made up the name since there are hundreds of Twice Baked Potato recipes out there. Ingredients:
6 baking potatoes |
6 tbsp butter |
3/4 cup of milk or cream |
1-1/2 tsp salt |
3//8 tsp black pepper |
3/4 tsp garlic powder |
1-1/2 cup shredded cheddar cheese |
green onion tops or chves |
3 strips of bacon, fried crisp and crumbled |
Directions:
1. Rub potatoes with oil and bake at 450 for about 1-1/2 hours. Or until a fork easily penetrates to the center. 2. Cut baked potatoes in half. Cut them so they will lay flat as halves. 3. Scoop out the center of the potatoes with a spoon leaving 1/4 inch of potato meat around the edges. 4. Mash the potato pulp and combine with warm milk, garlic powder, salt, pepper and butter. Blend with a mixer until smooth. 5. Place potato shells in a baking dish large enough to hold them in a single layer. Fill with the potato mixture. 6. Top with onion/chive, bacon and shredded cheese. 7. Microwave or broil until cheese is melted and mixture is heated through. |
