This is a recipe that I just put together one evening adding ingredients as I came across them in my fridge. The family loved it! Ingredients:
4 -6 large red potatoes |
1/4 cup butter |
3/4 cup cheddar cheese, shredded |
3/4 cup heavy cream |
salt and pepper |
Directions:
1. Preheat oven to 350. 2. Microwave bake the potatoes. (Time will vary according to your microwave) 3. Remove from microwave and cut potatoes into bite-sized pieces. 4. Place into an 8 X 12 baking dish that has been sprayed with non-stick spray. 5. Salt and pepper potatoes. 6. Cut butter into small pieces and distribute evenly over the top of the potatoes. 7. Sprinkle the cheddar cheese over the top of the potatoes. 8. Pour cream over all. 9. Bake uncovered in oven for 25-30 minutes or until cheese is well-melted and even a little crunchy. |
