Rd's Stuffed Peppers with Feta and Couscous |

Serve as a side dish with grilled chicken or as a light lunch. Recipe uses ready flavoured couscous for quickness but plain can be used and herbs/spices of choice can be added to taste Ingredients:
4 peppers, red |
150 g couscous |
47 g lemon, (1 lemon,juice only) |
1 tbsp olive oil |
6 oz crumbled feta cheese |
Directions:
1. Preheat oven to 200C. 2. Cut peppers in half and deseed them. 3. Cook couscous according to instructions on the pack. 4. Add the lemon juice and olive oil to the couscous and mix well. 5. Crumble the feta into the mixture and stuff the peppers. 6. Place on a baking tray and roast in the oven for about 10-15 minutes. 7. Servehot or cold. |
