1 cup napa cabbage |
1 cup snow peas |
1/2 cup crimini mushrooms, chopped |
1/2 cup zucchini, chopped |
1/2 cup fresh pineapple, chunked |
1/4 cup radishes, sliced |
1/4 cup pineapple juice |
1/4 cup fresh corn |
1/4 cup carrot, shredded |
1/4 tomato |
1/8 cup raw sunflower seeds |
1 tsp sesame oil |
1 tsp crushed red pepper flakes |
Directions:
1. Combine pineapple juice, sesame oil, red pepper flakes, and tomato in a food processor. Pulse until smooth and well combined. 2. In a large nonreactive bowl, toss remaining ingredients. Drizzle with dressing and enjoy immediately or chill to allow flavors to combine. |
