Ingredients:
1 cup napa cabbage
1 cup snow peas
1/2 cup crimini mushrooms, chopped
1/2 cup zucchini, chopped
1/2 cup fresh pineapple, chunked
1/4 cup radishes, sliced
1/4 cup pineapple juice
1/4 cup fresh corn
1/4 cup carrot, shredded
1/4 tomato
1/8 cup raw sunflower seeds
1 tsp sesame oil
1 tsp crushed red pepper flakes
Directions:
1. Combine pineapple juice, sesame oil, red pepper flakes, and tomato in a food processor. Pulse until smooth and well combined.
2. In a large nonreactive bowl, toss remaining ingredients. Drizzle with dressing and enjoy immediately or chill to allow flavors to combine.
