From the April 2010 issue of Sunset Magazine. Red Delicious apples are used in the original recipe but they unfortunately are not my favorite variety. I substituted Pink Lady. Ingredients:
4 apples, washed well, unpeeled, cored and cut into chunks |
1/2 teaspoon orange zest |
2 tablespoons fresh orange juice |
1/4 teaspoon cinnamon |
1/8 teaspoon cardamom |
1 pinch kosher salt |
1/4 cup plain greek yogurt |
1/4 cup chopped pecans, toasted |
Directions:
1. Combine apples, zest, juice, cardamom, cinnamon and salt in a food processor. 2. Whirl on PULSE to desired consistency, scraping down the sides as necessary. Note: I preferred the applesauce in small pieces as opposed to a smooth sauce. You will definitely need more than 2 tablespoons fresh orange juice. I had to add at least one half cup more liquid-diluted orange juice with filtered water, to attain the consistency I wanted. You'll have to drain the applesauce, too. 3. Top each serving with a dollop of yogurt and garnish with the toasted pecans. |
