A delicious, filling, nutrient-dense blend of vegetables and low-fat protein to have for lunch after the holiday meals. Delicious use-up for Thanksgiving and Christmas condiments too! Ingredients:
1 1/2 tbsp sugar-free cranberry sauce |
3 tbsp non-fat (preferably organic) prebiotic yogurt (i use liberte brand) |
1 tsp lemon juice |
1/2 tbsp yellow mustard |
1/4 tsp garlic powder |
salt and pepper to taste |
250g raw beets, coarsely grated |
1 tbsp minced shallot |
80g raw cauliflower, minced |
4 cups baby spinach, washed and dried |
