Mixed berries topped with a delightful rich crumble of nuts and dates. This is great with a scoop of vanilla ice cream, but recently took this to a pot luck were it was a hit even without the ice cream on the side. The original recipe is from Whole Foods Market. Ingredients:
2 cups blackberries |
2 cups blueberries |
2 cups raspberries |
2 cups strawberries, quartered if small and sliced if large |
1 -2 tablespoon pure maple syrup, depending on your taste and the sweetness of the berries |
1 cup pecans, raw |
1/2 cup walnuts |
1/2 cup pitted dates, roughly chopped (about 8 whole) |
1/2 teaspoon ground cinnamon |
Directions:
1. In a 9x9 Pyrex dish toss the berries with the maple syrup. 2. Put the pecans, walnuts, dates and cinnamon into a food processor and pulse until coarsely ground. 3. Scatter nut mixture over berries. 4. Can be served immediately but I like to chill 2-4 hours. 5. Suggest serving with a scoop of vanilla ice cream. |
