4 ears sweet corn, kernels cut off the cob |
1 large ripe heirloom tomato, cored and medium diced |
8 ounces fresh torn spinach or 8 ounces baby spinach |
2 shallots, minced |
12 basil leaves, torn |
1/4 cup extra virgin olive oil |
salt and pepper |
Directions:
