Raw Apple Cake With Rum Topping |

This is a great tasting recipe that looks like a fairly ordinary cake until you take your first bite! Ingredients:
1/2 cup shortening |
2 cups sugar |
2 eggs, beaten |
2 cups raw, peeled and grated apple |
2 cups sifted flour |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
1/2 cup chopped walnuts |
rum topping |
1/2 cup butter |
1/2 cup heavy cream |
1 cup sugar |
1 teaspoon vanilla |
1 tablespoon rum |
Directions:
1. Preheat oven to 350 degrees F. 2. Cream the shortening and sugar together thoroughly. Add 3. the remaining cake ingredients, mixing well. Pour into a 4. 9x13-inch cake pan and bake for 35 to 40 minutes. 5. To make topping, heat butter, cream and sugar together 6. until the sugar dissolves. Stir in the vanilla and rum. 7. Cut apple cake into squares and serve with hot Rum Topping. |
