Ravioli With Tomatoes & Zucchini |

I have absolutely no idea where I found this recipe. In fact, when I was browsing through my Private Recipes tonight, I came across it and decided it sounded rather good. Since I am looking for new recipes to post, I decided to refine it, and post it. I don't think I've ever fixed it, but I think it sounds good. I will be trying it SOON. Ingredients:
1 (9 ounce) package refrigerated cheese ravioli |
2 small zucchini, cut into 2-inch 1/4-inch strips |
1 onion, cut into small wedges |
1 (14 1/2 ounce) can italian tomatoes |
1/2 cup parmesan cheese |
Directions:
1. Cook ravioli according to directions. 2. Heat skillet with non stick spray or butter. 3. Add zucchini and onion, cook 3 - 4 minutes. 4. Add tomatoes, heat thoroughly. 5. Add cooked ravioli, stir together. 6. Cover and simmer for about 10 minutes. 7. Sprinkle with Parmesan before serving. |
