Ravioli With Fresh Vegetables |

Found in Better Homes and Gardens Fast Fix Family Food book. Ingredients:
1 (9 ounce) package refrigerated cheese ravioli or 1 (9 ounce) package tortellini |
2 teaspoons bottled minced garlic |
2 teaspoons olive oil |
1 1/4 cups thinly sliced summer squash (1 medium) |
4 plum tomatoes, quartered |
1 (15 ounce) can garbanzo beans, rinsed and drained |
2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed |
1/4 teaspoon ground black pepper |
4 cups shredded fresh spinach |
Directions:
1. Cook ravioli according to package directions; drain well. 2. Meanwhile, in a skillet, cook and stir garlic in 2 teaspoons hot oil over medium heat for 30 seconds. Add squash, tomato, garbanzo beans, thyme, and pepper. Cook and stir over medium-high heat 4 to 5 minutes or until squash is crisp-tender and mixture is heated through. 3. Add hot ravioli to vegetable mixture. Toss lightly. Arrange spinach on 4 serving plates; top with ravioli mixture. |
