1 (9 ounce) package fresh spinach ravioli |
1 (10 ounce) package frozen peas |
2 tablespoons unsalted butter |
1/4 lb thinly sliced prosciutto, cut into 1/4 inch strips |
1/8 teaspoon freshly grated pepper |
1/4 cup grated parmesan cheese |
Directions:
1. In a large pot of boiling salted water, cook ravioli until barely tender, 6-7 minutes. Drain and set aside. 2. Meanwhile place peas in microwave dish with 1 tablespoon water. Microwave on high 2-3 minutes. 3. In a large skillet, melt butter over medium heat. Add ravioli, peas, prosciutto and pepper. Cook 1-2 minutes to heat through. 4. Transfer to a serving dish and toss gently with Parmesan cheese. |
