Ravioli Lasagna (W/ Vegan Alt.)

I like to mix in fresh vegetables with the sauce, such as mushrooms, onion, diced tomatoes, bell peppers, and zucchini, but you can use whatever you like!!! This can also be made vegan by using all soy-cheese products and a vegan ravioli
Ingredients:
30 ounces frozen cheese ravioli, unthawed
16 ounces ricotta cheese
1 egg
16 ounces mozzarella cheese
1/2 cup parmesan cheese
26 ounces pasta sauce
vegetables (optional)
Directions:
1. Preheat oven to 350.
2. In a bowl, mix together ricotta, parmesan, egg, and 8 oz. of mozzarella; set aside.
3. Grease 13x9 inch and spoon a thin layer of sauce on bottom.
4. Arrange frozen raviolis in a single layer.
5. Top with half the ricotta mixture.
6. Cover with another layer of sauce, raviolis and ricotta mixture.
7. Top with remaining mozzarella.
8. Cover casserole with aluminum and bake for 30 minutes.
9. Take off aluminum and allow to cook an additional 15 minutes.
