Ingredients:
25 ounces frozen cheese ravioli |
2 large tomatoes, chopped |
1 small onion, chopped |
1 garlic clove, minced |
8 ounces sliced mushrooms |
8 ounces tomato sauce |
1 tablespoon chopped fresh basil or 1 teaspoon dried basil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/2 cup low-fat ricotta cheese (or use fat free) |
2 tablespoons reduced fat grated parmesan cheese |
Directions:
1. Preheat oven to 325 degrees. Cook and drain ravioli as directed on package. 2. Cook remaining ingredients except cheeses in large skillet over medium-high heat, about 5 minutes, stirring frequently, until tomatoes are soft. 3. Place ravioli in ungreased 8 x8 baking dish. Spread ricotta cheese over ravioli. Pour tomato sauce over top. Sprinkle with Parmesan cheese. Bake, uncovered, for about 20 minutes or until hot. |
